WHAT'S COOKING
LATKES
6  large potatoes
2 small onions
2 eggs
4 tablespoons flour
1 teaspoon salt
vegetable oil
1)Peel and grate potatoes and onions, place in bowl
2)Add eggs, flour, salt, let the mixture sit for a few minutes to thicken.
3)Heat several tablespoons of oil in a large frying pan.  Drop mixture by tablespoon and flatten with a spatula.
4)When Latkes are brown on the bottom, turn them over. When both sides are brown remove them and drain on papertowels.

Melissa's Rich Chocolate Candy

6 oz unsweetened baking chocolate
6 oz package milk chocolate chips
6 oz package sem-sweet chocolate chips
8 oz sweetened condensed milk
(do NOT use evaporated milk)
dash of salt
1 1/2 tsp real vanilla
1/2 cup chopped walnuts or pecans

In top of double boiler, melt chocolate, stirring occasionally.
Remove from heat.
Stir in sweetened condensed milk, salt, vanilla and nuts.
Spread mixture into a 9"x9" pan lined with waxed paper.
Chill about 2 hours or until firm.
Turn onto marble slab or cutting board.
Peel off paper and cut into squares.
Store in tightly covered container.

This was a favorite with the Washington county Judges at the fair

HUMAN TRAFFICKING

#Human trafficking is a form of modern-day slavery and is prevalent in many countries around the world.  Cases of Human Trafficking have been reported in all fifty states of the United States.  The number of trafficking victims in the US is largely unknown, however, hundreds of thousands of US minor aged citizens are estimated to be at risk for commercial sexual exploitation.  Is there really a "problem" here?  What signs can we look for?  How can we help?

Melissa's Rocky Road Candy
 12oz package milk chocolate chips
14oz can sweetened condensed milk
1 T butter - NOT margarine
2 cups walnuts broken into pieces
10 package miniature marshmallows

In heavy saucepan, over low heat, melt chips with sweetened condensed milk and butter (do NOT use evaporated milk)
Remove from heat.
In large bowl combine nuts and marshmallows.
Fold in chocolate mixture.
Spread in a 13" x 9" pan (lined with wax paper)
Chill 2 hours or until firm.
Remove from pan, peel off wax paper, cut into squares, Cover and store at room temperature.
